Chicken and Chorizo Pasta

 

Sick of eating the same, boring spaghetti bolognese on your pasta night? We’ve got a chicken pasta recipe that will mix things up a bit! It’s quick and easy – and will satisfy your mid-week carb cravings!

Shopping List

  • 1 packet of pasta (your preferred variety)
  • Knob of butter
  • 3 chicken thighs – fat removed and diced
  • 1 large chorizo – diced
  • 1 tbs crushed garlic
  • 1 red chilli – finely chopped
  • 1 Spanish onion – roughly chopped
  • 1 red capsicum – roughly chopped
  • 1 punnet whole cherry tomatoes
  • 1 jar sundried tomato pesto (or a jar a sundried tomatoes – pureed)
  • 300ml sour cream
  • Splash lemon juice

Method

  1. Heat butter in a pan
  2. Add chicken and chorizo – fry gently for 3-4mins or until chicken is browned
  3. Add onion, capsicum, garlic and chilli. Cook until the onion and capsicum have softened and the chicken is thoroughly cooked
  4. Add tomatoes to the pan and gently cook for 5mins or until the tomatoes begin to burst – commence cooking of pasta during this time
  5. Cook pasta as per instructions on packet
  6. While pasta is cooking, add sour cream, lemon juice and pesto to sauce and warm through – season to taste
  7. Add cooked, drained pasta to sauce and stir gently until coated

Serve and enjoy!
