Simple Sunday Meal Idea – Corn Fritters

 

It’s Sunday – the weekend is all but over and you want something easy to cook for dinner. Why not give these corn fritters a crack? They can be paired with anything from smoked salmon, to bacon and poached eggs (breakfast for dinner you might say). Or could easily be devoured on their own!

Shopping List

  • 4 whole fresh corn cobs
  • ¼ cup extra virgin olive oil
  • ½ cup sour cream
  • 2 eggs
  • 2 seeded long red chilli’s – finely chopped
  • ½ spanish onion – finely diced
  • 8-10 leaves basil – shredded
  • ½ bunch chives – finely chopped
  • 4 cloves garlic – grated
  • Plain white flour – amount varies depending on how wet the mixture is (usually ¼ – ⅓ of the total volume of the wet mixture, or enough for it to hold and have a consistency similar to pancake batter)
  • Salt and pepper

Method

  1. Cut all corn kernels directly off the cob
  2. Place roughly half the corn in a blender/food processor with the oil, sour cream and garlic. Blend until smooth
  3. Add the eggs and pulse to combine, then transfer to a bowl
  4. Add remaining corn, chilli, onion, herbs and salt and pepper – mix to combine
  5. Gradually add and mix flour until consistency resembles pancake batter (yet the mixture will still be textured by the corn, herbs etc.)
  6. Heat a pan (medium to hot) with oil
  7. Using a deep spoon or ladle, portion mixture in the pan to your desired size (as you would do with pancake batter)
  8. Cook on this first side until mixture begins to hold together, then carefully flip, ensuring not to break the fritter in the process (cook for approximately 2-2.5mins each side)
  9. Serve with desired accompaniments – check out our photos for some great serving ideas!

 

This recipe is quite adaptable! You can add paprika or sumac to achieve a smoky flavour. Or, if having these fritter with salmon, replace basil with ½ bunch dill for the perfect flavour combination.
